Nerdin Gardens: Big to Small - I Love Them All!
Despite wearing a bright yellow, sun-kissed disguise, lemon cucumbers have no citrus flavor. The satisfying crunch when biting through the skin is consistent though, whether a 2-inch round orb or a juicy tennis-ball size. To me, it has a mild, lemony flavor, of course, the color has me convinced!
Regardless, it is a Nerdin Gardens favorite. While harvesting, if I see a ripe one, plucking it from the vine and eating it, is a real treat with virtually no calories. Of course, we grow several cucumber varieties from Armenian to Japanese to English, they all play a role at our lunch and dinner table.
In the past, I have made garden salads with lemon cucumbers, zucchini, yellow squash, other cucumbers, spinach, romaine lettuce with a light, basalmic-mustard dressing that is fabo-wabo and we love it! With these lemon cucumbers, size does not matter, the crunch is big and flavor, so very satisfying.
Big or small, I want to eat them all!
