My friend Kathy Streib invited me to write a recipe; here is mine for this week

Try this easy, comforting classic, hearty vegetable soup recipe.

Packed with fresh vegetables and flavor, it's perfect for a

healthy meal any time but great in cool weather

Classic Hearty Vegetable Soup

Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (undrained)
  • 4 cups vegetable broth (or chicken broth)
  • 2 medium potatoes (Yukon gold or russet), peeled and diced
  • 1 tsp Italian seasoning (or a mix of dried oregano and basil)
  • 1 cup green beans, trimmed and chopped
  • 1 cup corn (frozen or fresh)
  • 1 cup peas (frozen or fresh)
  • 2 cups fresh spinach or kale, chopped
  • 1 tbsp lemon juice (optional, for brightness)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Sauté chopped onion, carrots, and celery in olive oil for 6-8 mins.
  2. Add minced garlic and Italian seasoning; cook for 1 min.
  3. Stir in tomatoes, broth, and diced potatoes. Season, bring to a boil, then cover and simmer for 15 mins.
  4. Add green beans, corn, and peas. Simmer 5-10 more mins until tender.
  5. Remove from heat. Stir in spinach until wilted, then add lemon juice.

This recipe sounds delicious and easy to make. I especially like the little touch of lemon juice at the end—it seems like it would brighten up all those flavors nicely.

I also add cilantro  Lise Howe; it has flavor, but you do not single it out. I have been buying the herbal pastes in tubes.  They are a little expensive, but they stay fresher longer, and you don't have to worry about the health  recalls

John Pusa It is hard to mess up a veggie soup - I had leftover tomatoes from the summer. I put them in hot water, peeled them cut them up in the soup. It was a great added touch!

Yum! This soup sounds wonderful Hannah! And I'm so glad it's finally 'soup season' again so I can get my crock pot out and start getting the house to smell so delicious all day long!

Anna "Banana" Kruchten I made this on top of the stove, but in a crockpot is not a bad idea - I love throwing everything in, and like magic, it is soup

Good afternoon Hannah Williams ,

This sounds delicious. It is still in the high 90's in Austin so won't be making this anytime soon! But I will make it when the weather turns cooler!

Dorie Dillard Austin TX - It is like someone turned a switch here. The cooler weather has hit us, and tomorrow we are supposed to get a rainstorm lasting the weekend. The temps are in the 60's

Hi Hannah! Your hearty vegetable soup looks absolutely delicious and perfect for this cooler weather. Thanks for sharing the recipe! It really puts me in the mood for soup season—I absolutely love a good split pea soup in the fall, but I will definitely be adding yours to my list to try!

We are huge homemade soup fans too, Hannah! This one sounds amazing. Thank you so much for sharing. I will say that I have never thought of adding the lemon juice but, will definitely see if I can tell a difference. I did have some veggie soup this week that had cubed sweet potatoes and it was delish!

Hannah, this recipe looks great, but will need to wait to cook it.  It was 92 yesterday, 86 today, so too hot for soup yet.
