RECIPE: Classic Beef and Cheese Baked Ziti
The Cozy Dinner Everyone Loves

There are certain recipes every home cook deserves to have tucked away, and a bubbling pan of baked ziti is one of mine. It is warm, generous and wonderfully forgiving—the kind of supper that makes the kitchen smell inviting before anyone even has to ASK what is for dinner!

This version has a hearty beef-and-tomato sauce, creamy ricotta and plenty of beautifully browned mozzarella. It feeds a table full of people without demanding fussy work, and the leftovers may be even better the next day. That is exactly why it earns a regular place in the rotation.

Grocery List

Produce: 1 small yellow onion, 4 garlic cloves and fresh basil or parsley
Meat: 1 pound lean ground beef
Dairy: 15 ounces whole-milk ricotta, 12 ounces shredded mozzarella and grated Parmesan
Pantry: 1 pound ziti, olive oil, one 28-ounce can crushed tomatoes, one 15-ounce can tomato sauce, Italian seasoning, red pepper flakes, salt and black pepper

Simple Prep Notes

Use a deep 9-by-13-inch baking dish and boil the pasta two minutes shy of the package directions so it stays tender rather than soft in the oven. Whole-milk ricotta gives the creamiest result. You may assemble the casserole a day ahead, cover and refrigerate it; add about 10 minutes to the covered baking time when starting cold.

Classic Beef and Cheese Baked Ziti

Prep time: 20 minutes
Bake time: 35 minutes
Serves: 8

Ingredients

  • 1 pound ziti
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 pound lean ground beef
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon kosher salt, divided, plus more for the pasta water
  • 1/2 teaspoon black pepper
  • 15 ounces whole-milk ricotta
  • 1/2 cup grated Parmesan, divided
  • 12 ounces shredded mozzarella, divided
  • 1/4 cup chopped fresh basil or parsley

Instructions

Heat the oven to 375°F. Lightly grease a deep 9-by-13-inch baking dish.

Cook the ziti in well-salted water until two minutes shy of al dente. Drain.

Meanwhile, heat the olive oil in a large skillet over medium heat. Cook the onion for 4 minutes. Add the beef and cook, breaking it into crumbles, until no pink remains. Drain excess fat if needed.

Stir in the garlic, Italian seasoning and red pepper flakes; cook 30 seconds. Add the crushed tomatoes, tomato sauce, 3/4 teaspoon salt and pepper. Simmer gently for 10 minutes.

In a bowl, stir together the ricotta, 1/4 cup Parmesan, 1 cup mozzarella, the remaining 1/4 teaspoon salt and half the herbs.

Toss the drained pasta with about two-thirds of the sauce. Spread half in the baking dish, spoon the ricotta mixture over it and add the remaining pasta. Top with the remaining sauce, mozzarella and Parmesan.

Cover with foil and bake for 20 minutes. Uncover and bake 15 minutes more, until bubbling and lightly browned. Let rest 10 minutes before serving; finish with the remaining herbs.

Debe’s Kitchen Tip ❤️

Spritz the underside of the foil with cooking spray before covering the dish. The cheese will stay on the ziti instead of coming away with the foil—and that golden, bubbly top is far too good to lose!

Ground beef used to be economical.  Now it is over $7 per pound, so I am substituting chicken in these dishes.

Funny but, I did that recently and hubby said to pay the extra for the beef--he's a meat and potatoes fan, Gwen Fowler SC Lakes & Mountains 864-710-4518!!

Debe Maxwell, CRS - I gave up beef in 1986. I will try this without the beef, and I just know it has to be delicious!

I recently used chicken instead and it was delicious, Patricia Feager. You don't have to use beef at all.

Good morning Debe Maxwell, CRS as the weather starts to cool off a bit here in Florida, the beef dish looks amazing. It amazes me as to how many restaurants CAN NOT make a good Beef and Cheese Baked Ziti. If they just follow your recipe, people would come over and over.

Oh, isn't that the truth, Katina Hargrove 352-551-0308! And, I prefer to make Ziti over lasagne because it's easier to both serve and eat!

Debe Maxwell, CRS my husband and I decided to order lasagna last Sunday at a pizza place. I kept cutting into the lasagna looking for meat, all I found was seems like tiny and I mean tiny bits of possibly something being like ground beef. We will never order that again, I make it so much better at home.

Debe Maxwell, CRS good morning, Debe... one of my favorite dishes of all times is baked ziti. Not always easy to find in restaurants here (unlike in NYC). So I make my own, but to be honest, I just throw stuff in and don't follow a recipe! Main thing... lots of cheese!

For sure--the cheese is key, Nina Hollander, Broker! I'll tell you who has great baked ziti is both Mama Ricotta's and Little Mama's (recent Michelin mention). That is one of my favorite Italian dishes and they both do a great job. It's probably the same recipe (same owner) but, it is divine!

Debe Maxwell, CRS yes, they do, Debe. I'm very familiar with both restaurants and their menus. Now, that being said, I think my homemade ziti is better. I would bet yours is, as well.

LOL Ray says the same thing but, I think he's just being kind, Nina Hollander, Broker! And, of course, for me, I think theirs tastes better, primarily because I get a date night out and don't have to clean up the kitchen!

Ha-ha, Debe Maxwell, CRS my problem is that I compare ziti here to ziti in NY City restaurants or at the homes of friends with Sicilian roots. Just doesn't compare.

Hello Debe Maxwell, CRS - I like pasta - perhaps I like it too much. I tend to eat more of it than I "should".  These casserole-type dishes are great because they can be made in advance and, dare I say, if there are leftovers, they taste better the second time around.

My pasta choices will always be without beef, chicken, or any kind of seafood. However, bring on the cheese!

Coffee, chocolate, cheese and pasta--totally my weaknesses, Kathleen Daniels, Probate & Trust Real Estate Svcs. And yes, I love being able to double-cook and have an entire meal prepared for another day in the month. I'm a fan of cheese tortellini and alfredo sauce--that is probably my favorite meatless pasta...well, second only to homemade smoked mac & cheese!

Perfect timing, Debe- I want to make another casserole for us and to take to my neighbor. Larry loves lasagna, but it can be more time-consuming than I like.

I'm making this one!!!    Lately I've been making penne ala vodka, which Larry loves and it's meatless!!!

Sep 26, 2026 01:48 PM
Debe Maxwell, CRS

Oh, that's amazing that he loves it despite it being meatless, Kathy Streib--lucky you! But, I'm with you, the lasagna is so much more tedious to prepare and this or the penne are so much easier to both make and eat! LOL  You'll have to share your penne ala vodka recipe with us!

Forgiving is the right word for baked ziti. It is one of the few dishes that survives being made an hour early and held, which is most of why it keeps showing up at my house. The browned mozzarella on top is non-negotiable.
