Delicious Morning Polish Coffeecake (Placek)
Great for Morning Office Meetings with Coffee Or at a Morning Open House
2 cups Milk, Whole or 2%
1 lb. Smart Balance (or butter)
1 tsp. Salt
2 cups Sugar
1 tsp. Cinnamon & 1/2 tsp. Nutmeg
1 tsp. Vanilla
6 Eggs (beat slightly in seperate bowl, set aside)
2 Yeast Cakes (dissolve in 1/2 cup Warm Water)
1 cup Raisins
6 cups Flour (All Purpose)
*optional: 1/2 cup dried cranberries; 1/2 cup Chopped Walnuts or Pecans
First Steps
Combine Milk & Butter, bring to a boil (scald).
When lukewarm, add salt, sugar, cinnamon, nutmeg, vanilla, egg mix & yeast cakes (disolved). Beat well.
Add raisins & add to mixture. Beat well.
Add flour, 2 cups at a time, beating well.
Set in warm place to rise & cover with a towel.
When doubled in bulk, beat again.
Grease 4 loaf pans & then pour mix into pans.
Second Steps Topping:
Beat 1 egg & brush over each loaf.
Combine 1 TBS. butter, 2 TBS. sugar, 4 TBS flour and 1/4 tsp. vanilla. Sprinkle over unbaked loaves.
Let rise until double in size.
Bake: 45 minutes in 350 degree oven.
