Hi, Mary!  I was wondering if you could answer a question for me?  I checked out the link and it made me curious...it states "In either case the signer must be present at the time of notarization".  In Utah it is possible (although I have never seen it done) to use what is called a "credible witness acknowledgement"  wherein someone who the Notary personally knows says that they witnessed someone whom they personally know sign the document.  Scary to think of, I know, but I'd like to know your thoughts on that?  Thanks!

I have not read Utah law so can not say anything on that other than --tha law needs to be changed if that is the correct meaning of it.

In Tennessee we can use a credible witness, two actually, to prove identity of the person signing if they do not have any other to prove who they are.
