Easy Apple Sauce

My Grandma used to spend all day making and canning applesauce so we could enjoy her efforts throughout the year. It seems that's one of those southern traditions that's kind of fallen by the wayside as our lives get more filled and hectic. So if you're like me and enjoy homemade apple sauce instead of the store bought variety! Well here's an easy recipe a friend of mine donated that'll give you that down home flavor using a city-slickers technique. Enjoy!
Applesauce
This makes an intense applesauce with skins-n-all. Some things are amazing in the microwave.
----slice about a doz. MacIntosh apples into 1/2" (about) squares
----put in a big pyrex bowl
----sprinkle top w/2tsp of Tang to prevent browning and
preserve flavor
------buzz on high in microwave for 10(hi-watt model) to 15 (older)
minutes, with a glass lid or corelle plate top.
----rest 5 minutes
---smash up w/potato masher orlarge serving fork (lots of mushing)
----if it's not mushy, another 3-5 min.
-----toss in 1/4 cup sugar and 1/2 tsp cinnamon.
The skin color goes right into the sauce.....red, red sauce...
Super fresh, intense apple flav.
Can use it instead of saur kraut on your fork with
knockwurst or hot-dogs.....mmmm!
skins-n-all applesauce is very potent against heartburn...
boiling it down to 1/2 makes a chewy stuff that will keep
for months in the fridge packed hot (those polypropylene
keeper containers). Munch on it or mix back up to
sauce before eating.
