Chris, yes, this ornamental cabbage is edible, though more bitter than its cousin, garden Kale.
Also, the pretty parts go grey when cooked. They are nice for garnish or decoration.

I love the way kale blooms in the winter. I do eat Kale...but its the dark green variety.

Steve: Thanks for commenting, I try to stay in the pink as much as possible.
Mindy & Jay: The decorative kale will only get colors when it is below 50 degrees and a few freezes
increase the color. They will survive down to 5 degrees - one tough & colorful plant. I like spinach
or swiss chard, kale is not one of my faves.
