Anybody out there like Brats?

Here in Wisconsin we have a ton of different types of brats and every butcher makes their own version. But for store bought brats a couple of national brands that are decent are Klements (which supply the dogs and brats for the Milwaukee Brewers stadium) and Usingers . I think they both also ship. A town north of here called Sheboygan is the brat capital and have their own version as well.

They make Johnsonvilles here in Milwaukee and I buy them occaisionally, but here they're sold raw, not pre-cooked and come in a bunch of different flavors. I like the beer brat that they sell the best. I usually buy most my brats from a butcher near me that makes them their own way, they come in a spicy Hungarian, Andouille, Polish, Italian and regular.

And one thing to remember, never ever poke a brat. They'll spray on you and that lets out all the juices. They need to be cooked slow and with indirect heat to prevent them from cooking to fast and splitting open.

When I cook them for a party I usually do the opposite of what most brat connoisseurs do and put the raw brats on a greased grill to brown them up on all sides, just breifly, this gives them a smokey flavor. Then I stick them in a roasting pan and cover them with beer. Also put lots of raw onions and green peppers in with them and let the whole thing soak overnight in the fridge. Then the next day put the roaster in the oven, set at 350 deg, for about 1 1/2 to 2 hours and they're done. Makes for a juicy brat and you can still enjoy your guest without having to do any cooking.

We also eat them here on a harder bigger type of roll, way differnt than the flimsy hot dog bun. Something to wrap your hands around

Hi Leslie, so they have brats as far south as Ashville?  That's great to hear cause I've always dreamt of someday retiring down near Ashville.  I really like the city and the mountains are beautiful.  One of my favorite stops is at the Mast General Store.  I can spend a few hours in there just wandering around.  And the Biltmore,  well need I say more, just awesome!

And yes, if cooking brats on the grill and they either cook too fast and split or poking them with a fork lets all that good flavor escape to the coals.

Oh yeah Bob, the Bratstop is a great place to catch a bite.  In fact they also have a store that you can buy their brats from to take home and prepare.  And of course they have a large variety of ice cold beers to go along it. 

Thanks for the Cream Puff tip, that'll be a future thread since Cream Puffs are a Wisconsin delecasy all their own.

Gary, That is too funny.  I am actually new here to AR and own a real estate firm in Florida, but was thrilled to lear that you can even talk about brats on Active Rain.

I was born and raised in Sheboygan, and I am sure I have tried every type of brat there is, and I was laughing as I read your post.

I'd reverse ya, DJ.  Cook em similar to yours the day before, then brown the on the grill that day.  Gives me an excuse to stand out there with a beer (or two).

In any case, they're delicious.  I fell in love with them in Berlin Germany back in the late 70's.

lol... I was thinking of the big headed dolls!  Pronounced brahts, I am familiar... Grandma & Grandpa moved here to CA from WI when my mom was a teen.  Thankfully, I am a vegetarian so I get to avoid the brats.  But boy do the WI folks love them.
