What an easy dinner after a long day... many Realtors come home late and now what to do for a quick and easy dinner. No you an not order pizza every day when you get home late.
How about a healthy, 'Seared Ahi Tuna with Broccoli and Mashed Potatoes'? Our friend Rocky Dickerson inspired us to share some easy summer meals that are delicious and can be done quickly. I am all about healthy and we can not always eat Gourmet, but it does not hurt to change things up a bit.
So with that said the ingredients are super easy:
1. Fresh Ahi Tuna from your favorite fish store or even some grocery stores sell them I like to get about 12 to 15 ounces and share with Diane.
2. Fresh Broccoli again the Grocery Stores can provide those for a quick shopping if you do not have the ingredients,
3. Little bit of lemon for flavor and to serve on the plate as well
4. Olive Oil I prefer Cold Pressed Olive Oil either from Italy or Greece
5. Soy Sauce I prefer low sodium ones
6. Box of Mashed Potatoes
7. Chicken Stock or Bone Broth or a combination of both.
8. Butter
9. Milk
Now to the preparation:
I like to use a Chicken Stock & Bone Broth mixture to make the foundation for the Mashed Potatoes for extra flavor and not using salt. I boil the liquid and then par boil the Broccoli to make both the vegetable and the liquid more flavorful.
Then I follow the Mashed Potato recipe to the point of not using water or salt but the mixture above.
Here comes the easy part, put some extra virgin olive oil and heat the pan, then add the fresh Ahi Tuna pour a little soy sauce and lemon juice on top . Depending how seared you like the Tuna flip it over, I prefer about a minute to two minutes and do the same on the other side of it.
There you have it another less than 30 minute meal! Bon Appetite!!
