This is only one we have. Doesn't call for apples, but I suppose you could add them?

Annette Lawrence , Palm Harbor, FL 727-420-4041 When I saw Russian salad I immediately thought of the cucumber salad that I enjoyed when I was in Russia. I then remembered having one with potatoes and apples. I found this one on-line --- http://cooking.nytimes.com/recipes/6298-russian-potato-salad. Apple is not in the title but if you read the ingredients, you will see the apple is included.

Annette,
My Russian grandmother made potato salad with eggs and peas. It was dressed with lemon and olive oil and seasoned with dill. She served with the potatoes still warm, and I really liked it. She did not add apples. Interesting idea. A
