Autumn Sweet Potato Salad with Pumpkin Butter Vinaigrette was served last week at our Canadian Thanksgiving -  OMG was it good! I had never heard of Pumpkin Butter before and I was so surprised to find it readily available. If you love pumpkin like I love pumpkin, you're going to love this salad dressing.  Please note, you can even substitute fresh pumpkin cubes for the Sweet Potato or Butternut Squash - your choice! I was raving about how good this salad was and had several requests to share the recipe so here it is: The secret is to get the Sweet Potato cubed and roasted in the oven, drizzled with olive oil and maple syrup with a bit of salt and pepper.   (TIP:  line your pan with parchment paper or tinfoil cause that syrup really BAKES on!!!)  400 degrees for 25 min, or til tender. Let me just say I LOVE AUTUMN! I love just about everything about it - the temperature, the colours, the smells, the food, the good mood that everyone seems to be in now that the crazy summer is over !! The colours are just beginning to pop on my street - see the view of my sun porch from my couch as I write this: We take the windows out of our Sun Porch in the Spring and don't put them back in until after Halloween.  I spend many hours out there, admittedly napping being a huge part of it! The smells begin to change this time of year too with the occassional whiff of woodsmoke from someone's fireplace in the evening.  I love to start cooking again this time of year after surviving the heat and humidity on cold salads the past few months.  (on those days when we actually had the energy ... 09/22/2014

Bobs Lake is one of the more popular lakes in Eastern Ontario, especially in the Greater Kingston Area. Back in 1870, the construction of a dam at Bolingbroke raised water levels by 15 to 18 feet. The new water level made one lake out of four, in addition to several adjoining bodies of water. All the lowlands and back bays were flooded, including Long Bay, Green Bay, Buck Bay, Mill Bay and Mud Bay. This created the much larger and more significant body of water we now know as Bobs Lake  which became much more attractive.   It’s new features, such as the great expanse of navigable water; hard-rock shorelines covered with white pine and good fishing, became major reasons for an increase in recreational use of the lake and led to the beginning of tourism.
