Autumn Sweet Potato Salad with Pumpkin Butter Vinaigrette was served last week at our Canadian Thanksgiving - OMG was it good! I had never heard of Pumpkin Butter before and I was so surprised to find it readily available. If you love pumpkin like I love pumpkin, you're going to love this salad dressing. Please note, you can even substitute fresh pumpkin cubes for the Sweet Potato or Butternut Squash - your choice! I was raving about how good this salad was and had several requests to share the recipe so here it is: The secret is to get the Sweet Potato cubed and roasted in the oven, drizzled with olive oil and maple syrup with a bit of salt and pepper.
