Dave’s Connecticut Tuna Tartare.
One of our favorite appetizers’ served with rice crackers is sushi grade tuna tartare. Of course getting the best sushi tuna is a key element to this dish and here in Fairfield County we always go to our local fishmonger at Fishtales Seafood in New Canaan.
Ingredients
2 pounds sushi grade tuna steak 1/2 cups olive oil 2 limes, zest grated 4 limes freshly squeezed lime juice 1 1/2 teaspoons wasabi powder 2 tablespoons soy sauce 1 1/2 tablespoons hot red pepper sauce 1 tablespoons kosher salt 1/2 tablespoons freshly ground black pepper 1/4 cups minced … (10 comments)

~ Connecticut Paella ~
We have been making this dish for years and all of our friends love it. The best thing about Paella is that there are no fixed rules, the dish changes with the seasons and what is available at the local market. That being said there are a few key ingredients such as Spanish Rice, Paella pan, chicken stock and fresh seafood (if you like). We really like our local produce and fresh seafood from Connecticut.
Our basic recipe is:
