Florida is know for it's smoked fish dips. There are many variations to making it depending on what part of Florida you are in. Harbor Docks restaurant in Destin, FL serves the best smoked tuna dip in the area. The owner, Charles Morgan, was happy to give out the recipe for an article written back in 2007. The recipe is so good because the tuna is fresh and only hours old when it is brined and smoked.
