My Christmas Gift To You --- Chocolate Mint Drops

I just made these last night...figured I'd share.

 

Chocolate Mint Drops

4 cups of powdered sugar (split in two)
1/2 cup butter
2 eggs
...1 pkg of semi-sweet chocolate chips (melted)
2 tsp vanilla
2 tsp peppermint extract (dont use "mint" extract or they taste like toothpaste...)

Use a counter-top mixer...KitchenAid or something like that

Cream butter and 2 cups sugar together until smooth
Add 1 egg and mix well....then repeat with 2nd egg
While mixing, add in melted chocolate and mix and add vanilla and peppermint extract

(Now, at this point, it should be smooth and creamy. Thats not really what you want. You want it about the consistency of chocolate chip cookie dough.) So, add powdered sugar until you reach that point. As you mix, it will gain in volume because you will be adding air into the mix also....this should also cool it down (You usually end up using about 3 or 3.5 cups of sugar total).

Once the batter just starts to bind up on the beaters, you are done.

Spoon onto wax paper on a cookie sheet and chill. Keep in the refridgerator when not serving. They will spoil.

(If you really wanted to get fancy, you could roll them in cocoa powder like the one pictured...or in the excess powdered sugar you have left over. Or, load the mess into a piping bag and pipe them into any shape you want to make. I'm not that fancy.)

Kirsten -- a Christmas Brunch, huh?.....Hmmm....And, to answer your question...Yes, I am one of those men who cook. ;-) Precious or otherwise. :-)

It is amazingly good...only, they use pineapple juice for the glaze, not orange juice.

 

Personally, Im more of a hearty breakfast person. If it were up to me, Id have biscuits and sausage gravy every day for a year. ;-)
