Once finished, you’ll have a wonderful meal to enjoy.

 

Chiffon Pumpkin Pie

This chiffon pumpkin pie might seem like your basic pumpkin pie. The secret lies in the gingersnap cookies that make up the crust. Instead of using plain ready made crust or homemade crust out of flour, try crushed gingersnap cookies infused with butter and ground ginger. For the filling, combine cinnamon, nutmeg, milk, brown sugar, gelatin, ground ginger, rum, heavy cream and of course the pumpkin puree. Bake at 350 degrees for 45 to 60 minutes until the pie is soft according to your likeness. This is something you can enjoy after a filling meal of cranberry apple stuffed pork loin!

 

Spicy Pumpkin Hummus

Hummus is a Mediterranean food made of chickpeas and sesame seeds but for the love of fall, we can definitely add a bit more. In a food processor, simply mix chickpeas with pumpkin puree, garlic, water, cumin, lemon juice, salt, cayenne pepper and olive oil. Mix until it reaches a good thick consistency which you can enjoy with bread, chips or crackers.
