Kentucky Derby 2019 - Mint Julip anyone?

Everything about the Kentucky Derby is extravagant — including the drinks. For those who are really looking to splurge, there's a $1,000 mint julep offered by Kentucky bourbon distillery Woodford Reserve. 
If you'd prefer to celebrate the Derby at home, I can give you 2 recipes we successfully use on Derby Day at Emo's Eating Emporium (one is at the bottom in my blog from 2011) and this one that is quite tasty too: 
Mint Julip with Steeped Mint Simple Sugar 
Up to a week in advance, make your 1/2 cup of Simple Syrup Ingredients 1 cup water
1 cup sugar
1 bunch mint leaves & stems
  Preparation In heavy medium saucepan over medium heat, stir together water and sugar until sugar dissolves. Increase heat slightly, then simmer 5 minutes, stirring occasionally. Take pan off heat, add mint leaves, and steep 15 minutes. Strain, then refrigerate syrup until cold, about 3 hours. (Can be prepared 1 week ahead. Cover and keep refrigerated.)  
 
Ingredients for the Julip: 1 scant ounce minted simple syrup
2 cups crushed ice
2 ounces bourbon (such as Woodford Reserve)
Fresh mint sprig, for garnish
