Smashed Cucumbers (Pai Huang Gua)
Smashed cucumbers is a dish typically served with hot Sichuan type dished; however, it is great just by its self. Igredients 2 English cucumbers 1 1/2 teaspoon kosher salt 3 teaspoons rice wine vinegar 1 teaspoon minced garlic 1 teaspoon sesame seeds toasted 1 tablespoon soy sauce 2 teaspoons toasted sesame oil 1 table spoon Franks Red Hot Sweet Chili Sauce 1 teaspoon sugar Directions Cut ends off the cucumbers and throw that away. Cut cucumbers into 3 equal pieces Place cucumbers into a one gallon Zip Lock bag Smash the cucumbers so they break into two - three long pieces. Do not over smash you just want to break them up you don't want to pulverize them Place the cucumbers into a colander over a bowl. Break or cut the cucumbers into about 1 inch pieces. Leave any seeds or liquid in the bag Sprinkle the kosher salt over the cucumbers and mix well Let the cucumbers remain in the colander at least 30 minutes, you want to draw out as much liquid as possible Mix the vinegar and garlic in a small bowl and let rest In a small fry pan toast the sesame seeds When the cucumbers are well drain make the dressing by combining all the remaining ingredients with the vinegar and garlic, and whisk thoroughly and pour ... more
