If you are looking to make an incredibly tender and moist turkey this year, I would recommend brining.  Soaking the turkey for 24 hours in this salt, herb and wine solution does the trick.  I’ve been experimenting with the recipe for about 4 years, and this is what I did last year, which was a real winner!
 
One 16 – 20 lb turkey, clean, defrosted, neck and extras removed
