Cajun Country), of which Lafayette, Louisiana is the hub, boudin is ubiquitous: signs and banners encouraging the passersby to stop and buy some HOT BOUDIN. Enter one of these establishments and watch the ritual of ordering this local delicacy. The folks behind the counter walk over to a steamer or slow cooker, pull the appropriate number of links, weigh them, wrap them, and then hand the warm bundle to an eagerly waiting (and possibly salivating) patron.
