Steak Lovers: Wet Aged versus Dry Aged Steak, what is the difference?

This past weekend I was pleasantly surprised with an evening to indulge in a big juicy steak.  I would have never figured that a Houston suburb like Pearland, Texas had such a hidden treasure.  Killen's Steakhouse is owned by Ronnie Killen who has a resume that would wow anyone.  This native of Pearland, Texas has attended the prestigious Le Cordon Bleu Culinary Institute in London, and he graduated with an Honor of Distinction after having trained with Julia Child and Ming Tsai just to name a few.  In 2005 he was a finalist competing to be the Executive Chef at the White House.  Unfortunately, he was not chosen, and he soon came back to Texas.  He has definitely made a name for himself at various establishments throughout the Houston area.  Many places where most of us engage in fine dining appear to be quite stuffy if we are honest with ourselves we eat without really knowing what we are eating.  My experience at Killen's was different.  The staff was super cool and gave you as thorough of a description of their menu as you desired.  Upon seeing the menu my realization of wet aged and dry aged steaks transpired.  Wet aged steaks are usually aged in a vacuum sealed bag and are the dominate mode of aging beef in the United States.  Wet aged steaks usually take less time to prepare and no weight lost in the process.  They are also cheaper to process.  However, dry aged steaks lose weight in the process and it takes about 15-28 days to prepare.  Dry aged steaks involve the meat being hung for several weeks after being cleaned.  The meat must be stored at near freezing temperatures.  One of the main goals is the concentration of flavor.  In turn the process is more expensive thereby warranting the establishment a reason to charge you more.  If you are ever in Houston, Texas or anywhere near by do yourself a favor and visit Killen's Steakhouse  www.killenssteakhouse.com it is truly one of the top best in Texas.  If you have any questions, comments or concerns please use the information below to contact me.

Chalmette, I have never heard of wet aged and dry aged steaks before.  It sounds pretty extravagant. You learn something new every day.

Mmmmm... sounds delicious.  Houston is home to some of the best steak houses.  Capital Grill and Pappas Steak house are a couple of my favorites.  I think all Houston, Active Rain, Steak Lovers should all get together once a month for steak.
