Coopersmith's was one of the first micro-breweries in Fort Collins CO, opening in 1989, with brewery operations and a very nice pub at No.5 Old Town Square in the heart of downtown. (And incidentally, Mary & I had one of our first dates sitting on one of their patios, so they have always been one of our local favorites). In 1993, they expanded across the walkway to include the building at No.7 Old Town Square, adding a large pool hall, another bar, restaurant seating and a third patio.
The pub fare is excellent, ranging from a great selection of burgers, sandwiches and pizza to such pub stalwarts as bangers and mash, Highland cottage pie, and fish and chips, along with more standard restaurant fare. But it's the beer that is the star of the show. Since 1989, over 150 different beers have been brewed, but you'll always find Poudre Pale Ale, Albert Damm Bitter, Horsetooth Stout, Sigda's Green Chile Ale, and Punjabi IPA, along with a constantly changing selection of seasonal beers. So the next time you're wandering around in Old Town, stop in at Coopersmith's for a bite and a brew, enjoy the historic ambiance, and discover one of the main reasons why Fort Collins is now called the Napa Valley of Beers.
