Shrimp has always been a favorite of mine. I guess I got that from my Grandma. She LOVED shrimp! I also love broccoli. I often order beef and broccoli when I order Chinese food. So, when I got this recipe from my friend Stephanie, this was right up my alley!
Roasted Shrimp & Broccoli
2 pounds of broccoli cut up into florets with some of the stem intact
1 lb of large shrimp, cleaned
2 Tbs olive oil
1 teaspoon whole coriander seeds (1/2 tsp. ground can be substituted)
1 teaspoon whole cumin seeds (1/2 tsp. ground can be substituted)
1 tsp salt
1/2 tsp pepper
1/8th tsp hot chili powder
zest of one lemon
1.) Heat the oven to 425.
2.) Spread broccoli into a single layer and pop into the oven for 10 minutes.
3.) Toss together one pound large shrimp, shelled and de-veined, with the 2 Tbs olive oil, lemon zest, 1/2 tsp salt and 1/2 tsp pepper in a bowl.
4.) When the broccoli has been in the oven 10 minutes, add the shrimp to the broccoli and toss (carefully.)
5.) Roast another 10 minutes, tossing once halfway through, until the broccoli is tender and golden around the edges
Enjoy! It doesn’t get much better or healthier than this! I would probably enjoy this is a nice Pinot Grigio!
