The farm to table movement is as old as time yet is making a come back, because consumers are becoming more thoughtful about what they eat, who they support, and why it matters. Restaurants with an emphasis on supporting local farmers (or utilizing their own garden) and cooking up seasonal menus to fit the produce, are in high demand. From trendy gourmet cuisine to mom and pop kitchens, the farm to table movement fan group is growing every season.

 

People are absolutely drawn to these businesses because it is "trendy" but most followers truly care about keeping it local, fresh, and simple. For those in the Colorado Springs area, here is a list of farm to table restaurants around town.

 

Natural Epicurean: The Broadmoor Hotel's restaurant Natural Epicurean has an eco friendly atmosphere with material made from recycled glass, sustainably grown wood, and a "living wall". All the ingredients are locally sourced (also from the Broadmoor's Garden), and the dishes are masterfully crafted. Open daily at 11:30.

 

The Margarita at Pine Creek: A Colorado Springs staple for over 40 years, The Margarita at Pine Creek is an eclectic fine dining restaurant tucked away in the city, surrounded by ponderosa pines and two joining creeks. The cuisine is a mix of global inspiration and the menu changes frequently to highlight local produce each season. Follow the link above for hours and directions.

 

The Skirted Heifer: The Skirted Heifer is a small family owned and operated restaurant located downtown across from Acacia Park and Wilber's Fountain. All the ingredients are local (including the hand crafted soda) and the beef is grass fed and sourced from 'Sangres Best Beef' from Westcliffe Colorado. The restaurant is small, but the food is incredible and worth waiting or ordering for takeout.

 

Seeds Cafe may not be officially classified as farm to table but definitely worth mentioning and including on the list of great restaurants using natural, local ingredients.  Seeds menu is gourmet worthy and yet their goals is to empower people through the power of food.

 

 Colorado Springs has several fresh ingredient high quality restaurants, but the three above exceed all expectations for farm to table enthusiast.
