Vegetable Lasagna with Alfredo Sauce
As the weather gets warmer here on the beautiful Space Coast of Florida, my desire for heavy food dwindles. So, this vegetable lasagna recipe really appeals to me this time of year. I love cauliflower and broccoli and anything with mushrooms is okay by me. What do you think?
Vegetable Lasagna with Alfredo Sauce1 head of broccoli
1 head of cauliflower
2 zucchini - thinly sliced
2 yellow squash- thinly sliced
8 sliced mushrooms (I use more!)
1 box of lasagna noodles
1 bag of shredded Colby cheese
1 bag of shredded Mozzarella cheese
red and green peppers
1 onion- diced
1 bag of baby spinach
2 jars of alfredo sauce (I make my own)DIRECTIONS:
- Cut cauliflower and broccoli into small pieces and cook for 5 mins
- boil lasagna noodles until tender
LAYERS:
- spray pan with PAM, then put a little alfredo sauce on the bottom of the pan
- add a layer of lasagna noodles
- add more alfredo sauce
- add squash, broccoli and cauliflower- lay them as flat as you can
- add layer of Colby cheese
repeat layers until pan is full then add mozzarella cheese on top!!You can add the spinach to the alfredo sauce but I layered it right along with the rest of the vegetables.
Cook in oven at 340 degrees for 1 hour. ENJOY!!!
