Ingredients:
- 2 1/4 c. rice cooked as per pkg. directions
- 1/2 lb. bacon
- 6 green onions, tops and all
- 1 can small shrimp
- 4 eggs
- 1/2 lb. fresh mushrooms
- soy sauce
Directions:
Cook rice and set aside. Fry bacon until crisp, drain on paper towel and crumble. Pour off most of the grease. In remaining grease saute chopped mushrooms and chopped green onions until the onions are clear. Drain can of shrimp and add the bacon and mushrooms and onions. Pour a little more bacon grease in the pan. Stir up the eggs and add to the hot grease. Stir until cooked, but not dry. Add to the other mixture. Put the rest of the grease in your wok or frying pan and when it is hot, add the cooked rice and stir until brown (golden). Add 3 tablespoons soy sauce and stir a few more minutes. Add the rest of the ingredients and heat through thoroughly. Put more soy sauce on the table for those who like more seasoning. This can be reheated the next day if there happens to be any left over.
