Coffee Cake Banana Bread Recipe

Ingredients:

For the Banana Bread:

  • Cooking spray, for pan
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 c. (1 stick) unsalted butter, melted
  • 3/4 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 large egg plus 1 egg yolk
  • 1/4 c. sour cream
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. espresso powder
  • 3 ripe bananas, mashed

For the Crumb Topping:

  • 1/2 c. all-purpose flour
  • 1/2 c. brown sugar
  • 1/4 tsp. kosher salt
  • 1/4 tsp. ground cinnamon
  • 4 tbsp. butter, cut into small cubes

 

Directions:

  1. Preheat oven to 350º. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
  2. In another large bowl, mix together butter, granulated sugar, brown sugar, egg and egg yolk, sour cream, vanilla and espresso powder. Add mashed bananas and stir until combined. Gradually add dry ingredients to wet ingredients until just combined.
  3. Make crumb topping: In a medium bowl, whisk together flour, brown sugar, salt and cinnamon. Add butter and use fingers (or a fork) to cut in the butter until the mixture looks like small crumbles. Scatter crumb topping over batter.
  4. Bake until a toothpick comes out clean, about 1 hour. Let cool 10 minutes in pan, then turn out onto a cooling rack to cool completely.Slice and serve.
