The Diet Continues - Week 88 - Good Stuff

I have had a good week.  I have been staying away from the carbs pretty good.  Not induction but good healthy living.

I made tri-tip last night - so good and so easy.  It has been on sale in bulk so my wife buys them and we freeze them. 

I slow cook them on the grill.  Put charcoal in the bottom of the grill on the sides and put a pan of water down amongst the coals.  Put a rub on the tri-tip and let it set a bit.  My wife shoved some garlic cloves into the meat.

Then once the coals are ready put the meat on the grill over the pan of water, then cover.  I let it go about 3 hours - Perfect.  Let it set 20 or 30 minutes before cutting into it.

Now another thing I do is I will grill something - you know fast cook with the heat.  Burgers, Brauts, Chicken, what ever.  We eat that and then the coals are usually still good to go so I then move them to the side and cook the tri-tip for left overs latter.  I like getting the most out of my coals.

My wife makes Mach Potato Salad out of Cauliflower and I use my low carb BBQ sauce on the meat.  Great low carb meal.

88 weeks? I'm impressed. That's a long time to stick with anything, but good for you!

Good for you Gene - 88 weeks in an incredibly long time to stick to a diet! You must have some great resolve. I've found that a low carb diet that includes complex carb like fruits and veggies keep the lbs off. Keep up the good work - you'll be at your goal weight before you know it!

Great work Gene!  I'm a carbaholic myself (not sure I could live without pizza) but I've found that beans and lentils are a good source of carbs that don't keep the pounds packed on.

Just a quick tip-  sub in beans to your meals and continue avoiding other carbs, works wonders!  Look up 'slow carb diet' for some tips and recipes, its a great way to keep the pounds off
