What's For Dinner? Yummy Beet'nBean Soup!


I received a present from my mom's garden this morning; a grocery bag full of beets!


She makes beet pickles, but I don't, so what to do?


I love soup, so that's the best alternative I can think of!

I peeled and chopped up some beets, onions and celery and threw them in a big pot! Added water and chicken stock.

Plus some chopped mushrooms, carrots and potatoes.
1 can of romano beans, 1 small can of tomato paste, some garlic and some chopped cauliflower.
Cumin; and salt and pepper to taste.


Let simmer for few hours or until the cauliflower becomes electric pink and soft!

Sweet and tangy! But make sure to wear pink or a large napkin; beet juice stains!

Mmmm that sounds good!  Do you ever make borcht soup with beets?  That's really good too.

I love beets...and the funny thing is I never had a fresh one until last year!  I grew up on canned veggies and last year I bought some fresh from the farmer's market and couldn't believe how yummy!

Georgina, although we live near the largest Ukranian settlement in the Province (Vegreville), I have never made Borscht and only tried it once!

Sharon, it's funny how we tend to settle for canned food and then how surprised we are when we taste fresh! That reminds me of the first tomato out of my garden my husband had ever tasted (he'd only had store bought) and he could not believe the difference in flavour! Yum-my!

Peg, you sound like an amazing cook.  I've never heard of a beet soup.  This sounds really healthy.  Granted....at this moment you've made me hungry for some pickled beets.

Sondra, you must not have any Ukranian communities around, I have grown up hearing about borscht, but never had any until a few years ago. We've always had our beets pickled and used the tops like spinach!

I'm not such an amazing cook, but I'm willing to experiment... I added the tomato paste after I'd tasted the soup. Have a great weekend!

I have never cooked with fresh beets, but must say your recipe sound pretty good and I might have to give this one a try.
