Sweet Of The Month Club - Lime-Glazed Citrus Tea Cakes
In the summer of 2011, The Pennsville Public Library held their 2nd annual Luau to raise funds for their operating budget. When asked for a donation, The girls at Coldwell Banker Pino Agency wanted to help, but felt the crunch of a stretched budget. So, utilizing one of our hidden talents, 'The Sweet of The Month Club' was born. We made a menu chock-full of some wonderful choices of baked goods and offered it up for the silent auction at The Luau.
Since the auction, the girls have prepared bread pudding, German chocolate cake, apple pie, Jewish apple cake, peach cake and this month.....Lime-Glazed Citrus Tea Cakes for the lucky bidder.
Ingredients:
2 cups all-purpose flour
3/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup unsalted butter
1 1/4 cups granulated sugar
1 lemon zest
3/4 cup sour cream
1/4 cup orange juice
1 tsp pure vanilla extract
3 large eggs
1 cup sugar
5 tsp fresh lime juice
1) Preheat oven to 350 degrees. Lightly spray two 4x8 loaf pans with non stick cooking spray.
2) In medium bowl, whisk together flour, baking powder, salt and baking soda.
3) In separate bowl, using an electric mixer on medium-high, beat butter, sugar and lemon zest until fluffy, about 2 minutes.
4) Beat in sour cream, orange juice and vanilla until well-blended, then beat in the eggs.
5) Add dry ingredients and mix on lowest speed until just incorporated. Don't overbeat or cakes will become tough.
6) Divide batter between the two loaf pans and bake for 40 minutes.
7) Let cakes cool for 20 minutes on wire rack then run a sharp knife to loosen cakes and turn out of pan.
8) Make the glaze, put confectioners sugar into a small bowl and add the lime juice, stiring with a fork until moistened. Adjust consistency by adding more lime juice or additional confectioners sugar, if necessary.
9) Drizzle glaze over tops of the cakes and let sit for 10 minutes to firm up.
We decided to use fancy, decorative cupcake pans rather than standard loaf pans, just to make the cakes look special for our customer's event the next day. We also did not drizzle the glaze over the cakes but opted to provide the glaze in a separate container so the cakes would not get mushy overnight.
The cakes baked until a nice golden brown and smelled wonderful when they came out of the oven!
Another successful goodie was done ......and all for a good cause.
