We have a beautiful clear day this morning. And we are expecting a high of 76. Little gems lettuce abounds (pictured above) along with mustard greens and leeks. They make a perfect two person small salad.
We use scallions often. They are one of the must have ingredients when you make a Chinese style dish. We often make kung-pao chicken, and they are used for the chicken marinade, as well as a garnish when the dish is done.
Spring garlic is the mild version of garlic. Unlike its later incarnation, it has a mild flavor some say akin to onions or leeks. We love its burgundy color.
We could not resist sharing these cauliflowers with you again...the color alone made us smile.
And last but no least, we keep a supply of fresh shallots on hand. We use them to flavor sauces, they have a mild delicate onion flavor, and they usually melt into the sauce when cooked for a long time.
