When you can only eat soft food: How about baked Ricotta Muffins...

When you can only eat soft food: How about baked  Mediterranean Ricotta Muffins? Diane had some serious Dental work done and can only eat soft stuff.  Well I decided tonight to make Ricotta Muffins. Takes a little prep work but well worth the finished product.

I decided to do two types of Mediterranean Ricotta Muffins: small and large. Well see for yourself.

Ingredients:    2 cups of ricotta cheese

                           4 eggs

                           3+/- sun-dried tomatoes in oil (chopped)

                            2 tsp. capers         (chopped)

                            2 table spoon of black olives   (chopped)

                            butter to grease the muffin trays  or muffin papers I prefer butter

     I do not use salt or pepper so use as you like... I do not use hot sauce either so if you want it spicy go for it:)

 Directions:       1.  pre heat over to 375 degrees

                            2.  chop sundried tomatoes and place in mixing bowl

                            3.  chop olive and add to mixing bowl.

                            4. add ricotta, eggs, cappers,  if using salt & pepper too

                            5.  Mix and beat all the ingredients well with a fork.

Then add a bay leaf on the bottom of the muffin tray, make sure you discard later do not eat it is just for flavor!!!!

Bake at 375 for 20 minutes if you like it crispier bake for another five minutes.
