golden beets at the Santa Barbara Famers Market

The color of these golden beets at the Santa Barbara Farmer's market caught my attention.  Unlike their red cousins, these beets do not leave a red stain on your hands when you peel them. Prior to the invention of  blush makeup, a slice of red beet was used to add blush to one's cheeks.

According to the Tiny Urban Kitchen blog, they are best eaten chopped and roated in the oven until they caramelize.  Here is their recipe,

Oven Roasted Golden Beets
2-3 golden beets
2-3 T vegetable oil
salt and pepper to taste

Peel and chop into cubes golden beets. Toss with vegetable oil and put in a baking sheet or tray, making sure the beets are in a single layer. Add salt and pepper to taste. Roast at 400 degrees F for about 25 minutes, or until beets are soft and have golden brown edges.

Serve immediately.

Pretty little things.  I just got back from our local Farmer's Market.  I brought home 4 kinds of potatoes.  Little Yukon Golds, Reds, Purples, and some small Garnet Yams.  There is something about Saturday mornings at the market, that sets the cadence of my internal clock:-)

I am always so impressed with your blog posts. To be honest, I wasn't sure what they were, and I was thinking in the line of some type of onion.

Your story made me laugh. When I went to Sedonia, AZ, I couldn't find my blush and found some clay soil and used it on my face. It was a great substitute for blush at the time; however, your idea of using a plant, like beets makes better sense to me than soil!

Our nearby lunch spot Stuft Pizza has amazing salads... and my favorite right now is their beet salad-- it has both red and golden beets... and it is delicious!  I wish my husband liked beets... I would make them all the time at home.  I just converted him to brussel sprouts-- so maybe beets are next!  K

Alexandra - these are interesting, I don't think I've seen them around here. I did see golden mangos yesterday at the Market but they were so overripe, I didn't take any home.

I have never eaten a beet. I know that may sound crazy to some. I have never been served one either. I guess I will break down and try them. I bet I will love them too. There are not too many vegetables that I don't like. This recipe sounds like a good one to try beets with.

My hubby and I just went to NYC and I had a roasted beet salad with goat cheese at the Gotham Bar & Grill it was wonderful. I love beets I will have to try this recipe I printed in out I may use EVOO instead. I hope you guys had a wonderful 4th!

That is such a great story about Sedona...The soil color certainly would make a great blush.  I had a friend who was into natural everything, and she kept beets in the refrigerator for that purpose only.  That is how I learned about that.
