Saturday Smiles: Fennel Pollen @ Santa Barbara Farmers Market

It is a beautiful day here.  Yesterday's winds cleared away a week's worth of marine layer!  It was 52 degrees at 6AM with a predicted high of 66,  In the mountains near Mammoth it was snowing last night and they are expecting 4-6 inches,  Strawberries were present throughout different stalls.  You could smell their intense perfume as you walked by!

All types of potatoes were on the Roots stand today.  We loved the sweet white onion stacked above them.

For those of you chefs who appreciate the concept of umami "Umami a savory taste, is one of the five basic tastes A loanword from the Japanese (うま味), umami can be translated as "pleasant savory taste". (Wiki), Fennel Pollen has graced the tables of Garden of Eden, along with Fennel flowers which are perfect for tea.  

 

The Wall Street Journal referred to Fennel pollen as a flavor that is-"Slightly sweet and ridiculously flavorful, a sprinkling of fennel pollen makes pure magic.." You can use it as a rub for pork, poultry or salmon, in pastas and risottos, and in cookies and breads.

Those are certainly delectable looking photos that make you want to dine on fresh, delicious food or perhaps create something new. Love fennel, but fennel pollen is new to me. We certainly are blessed with our Southern California farmers' markets

Good morning A & R. We keep fennel flower handy, but have never used fennel pollen without it having been turned into flower.
