My Saturday Foodie Post - Pepper Jack, Bacon and Tomato Stuffed Chicken Breasts

Several weeks ago I prepared Breakfast Burritos for hubby and his crew down at the Post Office.  Well, we have an excess of pepper jack cheese so I figured I'd use it to stuff some chicken breasts.  And who doesn't like bacon either!?

So, stuffed chicken breasts it was.

Pretty simple ingredients really.  Boneless, skinless chicken breasts, grated pepper jack cheese, chopped fried bacon, and diced tomatoes.

Place the chicken breasts between some plastic wrap and gently flatten out to about 1/2 inch.  Sprinkle the chicken with a little salt and pepper.  Put some grated cheese, the cooked bacon and diced tomatoes in the chicken, then gently roll them up.  Secure with toothpicks or string.

Spray some nonstick cooking spray in a baking dish and put the chicken there.  Season the top with some salt, pepper and a little paprika. Cook in a 350 oven for roughly 25 minutes, until cooked through.

I sliced and served with some sauteed green beans and some chipotle garlic mashed taters.

Hi Candice.  Honestly, what is with husbands and tomatoes anyway?  lol  Mine is the same way, but he DOES love a big slice on a burger.  I've been making these oven roasted ones with feta and olive oil.  He actually loves them! Let me know what kind of substitution you make...would love to hear!
