With all of this cold weather, I started making some homemade soup. This one is very easy to make and makes a large amount.

Hamburger Soup

1 lb. ground beef
1 large 32oz. can tomatoes, cut up
2 medium onions, chopped
4 medium carrots, sliced
2 stalks celery, chopped
1/3 cup barley
1/4 cup catsup
1 T. beef bouillon granules
2 tsp seasoned salt
1 tsp, dried basil, crushed
1 bay leaf
In large saucepan, cook ground beef until brown. Drain off fat. Stir in remaining ingredients and five cups water. Bring to boil. Reduce heat; cover and simmer for one hour. Season to taste with salt and pepper. Remove bay leaf. Serves six.
Very good!

Hi JoAnn,

I suppose you can substitute chicken or turkey or pork for the beef.  Sounds delicious on a cold Winter night.  I was thinking about making chili today.  That's as far as I got - thinking.  Best of good success to you this year!

Hey Jordan, You definitely substitute other meats in this recipe. I made a chicken and rice soup pretty much the same way and my husband loved it. Enjoy oyur Sunday!

That sounds delicious and it's still soup weather here on Long Island.
