Turning the Pudding Green ~ National Pistachio Day
Today is National Pistachio Day! Now who would not want to celebrate this beloved holiday with a little green pudding? :)
Pistachios are one of my favorite nuts. They are native to Asia and bring along some excellent health benefits. Pistachios contain a wealth of vitamins and minerals. They are a good protein source too. In fact, The Organic Facts Website has a list of nutrient benefits for pistachios that goes on forever. This particular statement makes the point well:

You can even buy Jello brand Instant Pudding in Pistachio flavor and yes, it's got green food coloring in it! I'm not one for "instant" anything, prefer the "real" thing not something that is loaded with chemicals and preservatives!

Well, here's 48 recipes from Bon Appetit using pistachios! That's quite a bit! My favorite way though is roasted and salted.. even though they are high in sodium that way.
My day caught up with me and then passed me by without a chance to grab a bag of pistachios today! I had really intended to enjoy them today, on National Pistachio Day!
