Summer Nibblies that look like you worked hard, lol

In my earlier Charcuterie post, I mentioned filling in the gaps with assorted nibblies.  At Emo's Eating Emporium, we believe in making simple but colourful nibblies that beg to be tasted.  This is a favourite in our home . . .  Watermelon Feta Blackberry Skewers.

 

Refreshing, salty and sweet - what more could you want?  Did I mention healthy?

To make 24 skewers you'll need:

  • 1 small seedless ripe watermelon, cut into 1″cubes
  • 6 ounces of Feta cheese, cut into 1” cubes
  • Fresh Ripe Firm Blackberries
  • Small wooden skewers
Skewer watermelon chunks, feta and blackberry.

Place on serving platter and store in refrigerator until ready to serve

Another fresh appetizer that works well on a board is Apple, Brie and Nuts:

Not too difficult to put together but always remember, use the apples of your choice but remember to immerse them in water and lemon to prevent them from turning brown (oxidizing)  If you're serving this in the summer heat, keep the brie in the frig til the last moment as it will become melty pretty darn quick.   Use the nuts of your choice: almonds, cashews, roasted pecans, macadamia all work well. 

Speaking of fresh and healthy . . . What about these Prosciutto "Sushi" ?

These are simply made with Prosciutto, Melon and Brie !

Do these one prosciutto slice at a time. Place prosciutto slice on cutting board lengthwise. Spread out the brie into the the center 3" of the prosciutto and press cheese out to reach the edges of the width of he prosciutto. Add melon "matchsticks". Roll up the sides of the prosciutto the roll over the melon until it form a full "sushi" roll. Slice down the center in half and repeat.  Your guests will think you are a chef extraordinaire,  lol

Kathy Streib  the fun thing about these is any melon or berry will work.  You can change it up as you see fit.  Sub Brie for feta even.  It all works.

Georgeous, Susan! Love the prosciutto sushi idea. As for the items with feta cheese... I don't eat feta... what do you suggest instead?

Nina Hollander, Broker  I've tried it with Fontina which was nice and also with Brie.  I don't think you could go wrong, even Stilton would work.  The idea is get a salty cheese.
