Hatch Green Chili to be exact. Hatch is a village in Doña Ana County, New Mexico, United States.
Hatch enjoys the distinction of being the home of "The World's Best Chile Pepper", according to a report by the BBC World News. Hatch Chile is best prepared by roasting over an open flame. Each year during chile season, dozens of chile vendors can be found lining the streets of Hatch roasting the local chile.
The Hatch Chile Festival is an annual event that occurs each Labor Day.This event attracts people world wide to a place known as the chile capital of the world. Hatch is 40 miles north of Las Cruces, New Mexico on Interstate 25. You can learn all about Hatch and their Green Chile by clicking HERE.
Now, why am I telling all of you Texans about this?! Well, we just happen to be having our own Green Chili 
Festival here in San Antonio. If you visit your local HEB, they will be selling authentic Green Chili for you August 21st-23rd and if you missed it this weekend you can catch it next weekend the 28th through the 30th. Don't miss out on this great tasting chili. I grew up in New Mexico and Green Chili Stew was one of my favorite meals. Green Chili Stew ain't your Texas Chili, but it is sooo good!!! My husband and I went to the "Gucci B" Cental Market, in Alamo Heights, TX. That's HEBs nickname over there because of all the wonderful things this store has to offer and its "high end" flavor. If you stop by the dates that I told you, they will roast your chili for you. HEB happens to be the largest distributor of Hatch Green Chil
e outside of New Mexico accoriding to this guy, Javier who took our order of one case of HOT chili! And he gave me a cool bag! Now, 
no worries, if you can't handle it too hot, they have mild as well. They also have foods already made with Hatch Green Chile, T-Shirts and all kinds of fun stuff!!
