Homestyle Cooking with Mary: Left-overs or Beef Stew?

Yuk . . . Not left-overs again!

Some foods just taste remind me of my mother's cooking while growing up.  One of those meals is stew, especially beef stew.  Usually I try to make it at least once during the winter, but this year it didn't get made.

Well, until today. Well, not really.  Last weekend Hubby made our favorite pot roast. Pot roastWe put the left-overs in the refrigerator for later in the week.  Left-overs are good for those days when you are too busy to prepare dinner.

Coming home after teaching all day I just pulled the container out of the refrigerator and put it in the microwave.

Wait a minute.  I just found another orphan in the refrigerator:  stewed tomatoes.  Let's add stewed tomatoes to the pot roast.  Now let's sprinkle a little Parmesan cheese.

 

WOW!  "That was the best stew."

I couldn't help but think left-over stew would taste good for lunch tomorrow.  Oops!  It's all gone.

Hi Mary...One of my sisters and I were just talking about my mom's beef stew last night.  My mom made delicious beef stew, meatloaf, baked macaroni and cheese...so many of the things that I now long to eat.  

Yes, I know I could prepare them but they never taste quite the same.  It must have been that shot of love.

Pot roast is one of those foods that tastes even better as leftovers (especially in stew).

Hi Mary - Do you remember the story about stone soup?  That sounds like what you're doing with your "orphans".  I love beef stew.   Pairing it with your hubby's pot roast is perfect.

I make beef stew from left over post roast nearly every time.  I love beef stew.  Never put tomatos in it, but might give that a try.

Wanda--You are so right.  I just stood at the refrigerator and pulled things out and the creation became stew.

Frank--Creative?  I wasn't trying to be creative, but it happened and it was good.

Kate--Those old recipes bring back good memories, don't they?

Irene--Some left-overs become family favorites.  My daughter used to eat lasagna for breakfast.

Robert--the original pot roast had potatoes so the stew had some, too.  I just needed to add the tomatoes.  The cheese was an extra touch.

Pamela--I didn't think of the 'stone soup' when I was pulling things out of the refrigerator, but it is the same concept.

Tammy--My mother and grandmother made one or the other and there weren't any left-overs.  Too many around the table I guess.  Now there is just Hubby & I so we often have left-overs.
