Yuk . . . Not left-overs again!
Some foods just taste remind me of my mother's cooking while growing up. One of those meals is stew, especially beef stew. Usually I try to make it at least once during the winter, but this year it didn't get made.
Well, until today. Well, not really. Last weekend Hubby made our favorite pot roast. We put the left-overs in the refrigerator for later in the week. Left-overs are good for those days when you are too busy to prepare dinner.
Coming home after teaching all day I just pulled the container out of the refrigerator and put it in the microwave.
Wait a minute. I just found another orphan in the refrigerator: stewed tomatoes. Let's add stewed tomatoes to the pot roast. Now let's sprinkle a little Parmesan cheese.
WOW! "That was the best stew."
I couldn't help but think left-over stew would taste good for lunch tomorrow. Oops! It's all gone.
