I love making soups and stews in the cold months, but the fact it was staying cold in Silicon Valley until June was causing me wish to for salad weather. Finally salad weather has arrived here in Silicon Valley. I could now make our favorite Watermelon and Feta Salad.
I don't know who first tried Watermelon and Feta together but they are my hero as the combination does not sound like it would be good together but it is.
This is a nice way to finish off a larger watermelon or the perfect recipe for one of the small watermelons that are getting so popular.
I use a blood orange vinegar in the salad dressing but you can substitute fresh orange juice if you do not have blood orange vinegar. We also like to use a sprig or two of mint to enhance the flavors. I prefer a French Feta for the creaminess and for the mild flavor. Look for radishes that are mild, not too hot. I usually buy the bulk baby greens at the grocery store and the variety of lettuce varies with the season.
Blood Orange Salad Dressing
1/2 C Olive Oil
1/4 C Blood Orange Vinager
1/4 C Fresh Orange Juice
1 tsp crushed fresh mint
2 C Watermelon, cubed
2 C fresh greens
6 oz Feta crumbled
6 radishes sliced
Mix the dressing first to let the flavors mingle. Mix the Feta and Watermelon with the radishes. Place the Watermelon and Feta mixture on the greens, add salad dressing to taste. Season with salt and pepper.
