Seafood Cobb Salad with Avacado Ranch Dressing

 

With the heat of summer finally here, there's no better time to make some great salads!  This is my take on a Cobb salad, with a seafood twist.

Here's what you will need:

Chopped lettuce - I use Romain
Salad shrimp
Crab (I use the Krab stuff, only because I'm deathly alergic to the real stuff)
Hard boiled eggs
Bacon, chopped up and fried
Avocado
Tomatos
Blue Cheese crumbles
Lemon slices 

Arrange all of the above ingredients on a plate or in a large salad bowl.  For the dressing I used about 1/2 cup of a store bought ranch, mixed with one mushed up avocado, some lemon juice and about two tablespoons of sour cream,  Mix all until creamy. 

Perfect for a warm weather dinner on the patio!

Yes please!! That looks so good.. Hey I have a great trick for hard boiling eggs that won't cause that grey ring around them....  put eggs in cold water and let heat up to a rolling boil. The minute they boil, turn off the heat and let them sit for exactly 10 minutes. They will be perfect done. :)
