Bananas Foster Bread
1 ½ cups mashed ripe banana ¾ teaspoon baking soda
1 cup packed brown sugar. Divided ½ teaspoon salt
6 tablespoons butter, melted and divided ½ teaspoon ground cinnamon
¼ cup dark rum or cognac 1/8 teaspoon ground allspice
1/3 cup plain fat free yogurt cooking spray
2 large eggs 1/3 cup powdered sugar
1 ½ cups all-purpose flour 1/4 cup ground flaxseed
Preheat oven to 350
Combine banana, ½ cup brown sugar, 5 tablespoon butter and 3 tablespoons dark rum or cognac in a nonstick skillet. Cook over medium heat until mixture begins to bubble. Remove from heat; cool. Place bananas mixture in large bowl. Add yogurt, remaining ½ cup brown sugar and eggs. Beat with mixer at medium speed.
Lightly spoon flour into measuring cups. Combine flour and all seasonings. In a small bowl. Add flour mixture to banana mixture and beat till mix. Pour batter into 9x5 loaf pan. Bake for 1 hour. Check with wooden pick to make should it is clean.
Remove from oven, cool 10 minutes on a wire rack. Remove bread from pan. Place on wire rack.
Combine remaining 1 tablespoon melted butter, 1 tablespoon of dark rum or congnac, and powdered sugar; stir until well blended. Drizzle over warm bread.
This is very tasty.
