Spicy Shrimp Tacos - Healthy and FULL of Flavor!

This is a recipe for Spicy Shrimp Tacos that are so delicious and healthy I wanted to share. There isn't any cheese in this recipe- the combination of lime juice, cilantro & crunchy onion along with the creaminess of the mayo and sour cream are incredible. Hubby won't touch cole slaw, but this is one of his favorite meals! The ingredients needed are:

 

The Shrimp Marinade

1 pound of uncooked shrimp, peeled & deveined (I use frozen, medium or large count)

3 tbs of Taco Seasoning package

3 tbs canola or olive oil

1 tsp of grated lime zest

 

Marinating Shrimp

 

The Cole Slaw Filling

1/4 cup of low fat mayonnaise

1/4 cup of low fat sour cream

1-2 tablespoons of fresh lime juice

1/2 small, chopped red onion

2-3 tbs  cilantro, freshly chopped

2 1/2 cups of packaged cole slaw

 

Coleslaw Filling

 

8 6" low fat flour tortillas

 

Defrost the shrimp, peel and devein. In a medium bowl add the shrimp, taco seasoning, lime zest and oil making sure to coat the shrimp well. Refigerate while you prep the filling.

Whisk the mayonnaise & sour cream in a large bowl; add the lime juice, chopped onion, cilantro and cole slaw. (Adjust to your taste, I am heavy handed with the cilantro and lime juice). Mix well.

Preheat oven to 300 degrees. Wrap tortillas in foil (if you don't have a tortilla warmer) and bake for 10 minutes.

Arrange the shrimp in a skillet over low to medium heat (depending on your stove) and cook for 3-5 minutes, until opaque.

Fill the bottom of the tortilla with the cole slaw mixture and top with the evenly divided shrimp. Dig in!
