Autumn Apple Crunch Pie - you asked for it so here it is!
It seems Autumn has arrived because here at Emo's Eating Emporium, I started baking again!! I shared a photo online of the end result of yesterday's attempt and it prompted a flurry of recipe requests!
(You can see a hole in the crust where SOMEBODY was sampling [and by "somebody" I don't mean me!]!)I call this Apple Crunch Pie and, because I sort of made it up as I went along, I've done my best in recreating the recipe!
Preheat oven to 450 degrees
I started with "Pat-A-Pie Crust" which is a crust that doesn't make a mess ie. does not need rolled out!!!
In a large bowl, sift or whisk together 2 cups of all purpose flour with 2 tsp of sugar and 1.5 tsps of salt.
In a measuring cup, whisk together 2/3 cup of vegetable oil plus 3 TBSP of milk.
Add to flour mixture and mix with a fork.
PAT 2/3 of dough into a pie plate. Put the rest aside for later.
For the filling:
Peel, core and slice 8 apples of your choice, a put in a bowl. Squeeze some fresh lemon juice over them and mix it up well (to keep apples from discolouring). It is MacIntosh season here so that is what I used!
I like to mound mine up high in the middle so use as many as you think you'll need to really fill the dish.
Mix in 1 cup of sugar, 3 TBSP of flour, 2 tsps of cinnamon and 1/2 tsp of ground nutmeg and 1/2 cup of dry tapioca. (this is to prevent the apples from turning all liquidy and destroying your bottom crust)
Dump this apple mixture into your bottom crust, mounding high in the centre.
With the remainder of your Pat-A-Pie Crust, add in a handful of shredded coconut, a handful of Almond Flour, some chopped walnuts or pecans, 1 tsp of Cinnamon and maybe a 1/4 - 1/2 cup of Maple Syrup. You're going to mix it all together until it forms a damp crumble texture.
Drop it in small clumps all over the top of the apples. There is no need to seal the edges or anything. As you can see, I make mine quite rustic.
Put pie on cookie sheet (in case it drips) and place on centre rack in 450 degree oven for 10 minutes.
Then, reduce the temperature to 350 and bake for another 50 - 60 minutes, til apples test tender.
If you can wait, allow pie to cool slightly and then dig in!
