Carol Williams is hosting a party! And all we have to do is share our party recipes... Well, this year for the SuperBowl, we're going to be staying in and having a quiet (well, if you don't count the yelling) SuperBowl evening. The party starts at 4:30 here, so at halftime it will be dinner time, and we'll be making.....
Homemade Pizza! While I could make all sorts of things if I were actually going to a SuperBowl party (sweet potato/bean burritos, homemade hummus or spicy tomato salsa, butternut squash salad, or any number of other things), since SuperBowl falls on a Sunday... and since we haven't been able to have our typical Sunday meal for the last few weeks, we're having our Sunday pizza.
The recipe is so simple!
First, the sauce. Make spaghetti sauce, starting in mid-afternoon, so the house smells delicious by kickoff. As to "how," it all depends on what you like to eat in terms of sauce. Meat? Add that and call it gravy. No meat? Make it like this: chop onion and cook in oil in a good sauce pan. When it's all nice and soft, add diced garlic and cook a few minutes till soft. Then throw in tomatoes. If you like smooth sauce, throw the tomatoes in a blender or food processor first. You can use diced or crushed canned tomatoes or fresh tomatoes. Whatever works! Once the onion and garlic is cooked and the tomatoes are thrown in, add basil, oregano, parsley. Red wine or meat if you want that in there. Turn the heat down low, throw a cover on, and let it cook for hours. You'll be hungry way before dinner time.....
And while that's cooking, make your dough at least two hours before meal time. Put about two and a half cups of flour in a large bowl. Let the tap water get hot, and put a cup of hot water in a small bowl with one packet yeast (not fast-rise yeast), or 2 1/2 tsp of the jarred yeast. Put 1/2 tsp sugar in the bowl as well, stir it all up, and let it sit about 5 minutes until it's getting puffy. Then add the yeast water to the flour along with a little more hot water and 1/4 cup oil. Mix it all up, then knead it for a few minutes until it's nice and smooth. Add more flour if it's moist or more warm water if it's dry. Then oil the bowl, put the flour ball in the bowl and cover with a towel. Leave in a warm spot for a few hours until it's about doubled in size.
Then... a half hour before meal time, put your dough on an oiled/corn mealed pizza tray. Use a roller to roll the dough to the edge, make a small lip on the outside edge and get ready to decorate. First, put lots of hot homemade sauce on the dough. Then, put shredded mozzarella on the entire pizza, from the middle to the edges. Don't be stingy! Then a bit more oregano, and any toppings you might want. Black olives, onion, pepperoni, whatever....
Put the pizza in a hot (400º) oven for 20-30 minutes (you'll know it's done when the cheese is slightly browned and the bottom is very firm.)
Cut and eat, all while yelling for your favorite football team. Tastes great with a cold IPA or delicious cabernet sauvignon or red zinfandel.
