Not So Wordless Wednesday: Spring inThree Shades of Aspargus
Spring is the season for asparagus. At El Rancho Market in Santa Ynez, last Saturday, we were delighted to spot the three colors of aspargus pictured above. We purchased a bunch of white, and a bunch of purple.
Green asparagus is a bit grassy in flavor, while white asparagus is mild and slightly bitter. Purple asparagus is a bit nuttier and sweeter because it has about 20 percent more sugar in its stalks. While the stalks are purple on the outside, the interior of the asparagus is the same as a green spear. (By clicking on the link, you can read more about it and the various cooking methods)
"Respecting the dignity of a spectacular food means enjoying it at its best. Europeans celebrate the short season of abundant asparagus as a form of holiday.
In the Netherlands the first cutting coincides with Father's Day, on which restaurants may feature all-asparagus menus and hand out neckties decorated with asparagus spears."

"(on asparagus) Europeans of the Renaissance swore by it as an aphrodisiac, and the church banned it from nunneries."
