Trois Petits Cochons Organic Pate de Campagne

Chef Dolores picked up a package of Trois Petits Cochons Organic Pate de Campagne, an organic port pate for our happy hour at home. It was an excellent and we enjoyed it on toasted baguettes with a nice wine selection.

Paté de Campagne is the traditional country pork paté of France. All USDA Organic, coarsely ground pork meat and pork liver are spiced with onions, garlic, parsley, bay leaves and thyme. The mixture is then slowly cooked in the traditional way. The result: a culinary delight that merely needs fresh, crusty bread, cornichons and a touch of dijon mustard. Pair with a full-bodied red wine, robust and fruity with minimal influence of oak or a light to medium-bodied red wine with a hint of earthy aromas balanced by a fruit-forward bouquet.

Les Trois Petits Cochons, which is French for The Three Little Pigs, makes award-winning pâtés and charcuterie. The company started in 1975 as a small charcuterie shop in the heart of New York. Les Trois Petits Cochons offers a complete line of all-natural pates, terrines, mousses, cornichons, mini toasts, mustards, saucisson, and other French specialties. Thier products are all-natural, crafted with high-quality ingredients and made in small, handmade batches.

Roy Kelley So, is this like chopped chicken liver? Sounds quite elegant!

No. This is a pate that you can slice or spread. Give it a try. There are many varieties of pate for you to sample. The 4 or 5 ounce packages are large enough for a happy hour for two servings.

Roy,

We both love  Pâté de Campagne.  I remember in Paris a restaurant where they would bring a piece to the table with gherkins and freshly sliced baguette.  It was a communal table.  A

Hi Roy... I love Pate de Campagne... and I love eating it just the way Ron and Alexandra Seigel described. I used to bring some wonderful pate back from Paris from the Food Hall in Galleries Lafayette... but it's no longer allowed in through customs. Very sad.

I think Dolores picked up this selection at the MOM's store during a recent visit after an appointment on Shady Grove.
