Family Favorite Recipe - Lime Jello Salad

Debbie J. Webb's "Lime Jello Dessert/Salad" Recipe

Very Easy to Prepare  

Ingredients:  

2 boxes small or 1 box large:  Lime Jello  

One 8oz. pkg. Original Philladelphia Cream Cheese (Note: the 1/3 less Fat or Fat Free does not work well at all in this recipe)  

1 can 20oz. Crushed Pineapple in it's own juice (I use Dole brand)  

1 cup Chopped Pecans  

2 cups Boiling Water  

1 cup Cold Water    

In a 13 x 9 glass dish:   

Add dry Jello Add 2 cups Boiling Water Mix Well with fork.  

Add 1 cup Cold Water Mix well.  

Add Cream Cheese and mash with a fork; start with one area at a time until all is done. 

Mash any large pieces left.  Don't mix.  

Add Crushed Pineapple, including the juice!  Gently mix.  

Add Chopped Pecans (reserve a tad to sprinkle on top after mixing). Gently mix.

Sprinkle reserved pecans on top.  

Carefully (not touching liquid) place plastic wrap tightly over dish.  

Refrigerate until firm.  At least 4 hours.  Overnight is best, as this dish usually sits out buffet style. 

TIPS:

Prepared a day in advance, makes your main day smoother.  

Using a plastic spatula makes nice square cuts & keeps it neat.  

Walnuts can be substituted for the pecans, but pecans make a hit! 

Also, nuts can be eliminated if needed due to allergies, etc.  

This is a family & friends favorite at Holidays & Special Gatherings.  They will ask you to make this everytime!
