Brining in herbs and oranges from my garden two days. Will pat dry tonight. The breast and insides are stuffed with rosemary salt and pepper. Olive oil over all the skin. No basting- it messes with even oven temperature. I use a thermometer to check temperature. If legs or wings start to get to brown cover with foil. Start at 400 for 20 minutes and turn down to 300 until done. Time depends on weight and your oven. Take out - throw away rosemary. Allow to sit for 15 minutes then transfer to cutting board. Allow to sit 10 more and make gravy. Come on over I always make too many pies

As the family chef I first put butter under the skin-lots of it. Then I brush the skin with olive oil and roast/ basting as it goes. The skin gets crispy and the meat is so juicy it melts!
