I was caramelizing onions the other day and I could tell Diane had a craving for the best French Onion Soup. I have not made it in a while, clearly because it is very time consuming. Well today was the day I finally finished it and she was thrilled. The recipe is easy 8 sweet onions, caramelized for anywhere from 4-8 hours. Then once it is about a cup and a half add it to it about 4-5 quarts of chicken stock, I mix it with chicken bone broth. Baked Chicken Breasts, while working on tomorrow's meal... as most of you know tomorrow will be French Onion soup per super chef Thomas Keller's recipe. The recipe from the cookbook Bouchon of the same name as the restaurants. Now with that said today was about baked chicken breasts with shitake mushrooms sautéed with onions and farrow. The best part was I had some leftover caramelized onions to prepare it with. Then I placed them on a bed of fresh baby spinach with baby kale.

OK many of my readers will scratch their head, how can Endre compare Caramelizing Onions with Real Estate? Well the answer is easy, please google it and you will find out that there are people suggesting Caramelizing anywhere from 30 minutes to 50 minutes.... and may I say the result will be mediocre to lousy. Then go look at Uber Chef Thomas Keller's idea of Caramelizing Onions and you get the answer FIVE HOURS.... what is the difference? Quality and Flavor. Almost Speechless Sundays: French Onion Soup Bouchon Style... If you are a lover of French Onion Soups, then my advice is for you to either go to Uber Chef's Thomas Keller's Restaurant aka Bouchon and have them serve you the best French Onion Soup ever. Now if you are like me, the proud owner of his Cook Book and having six or eight hours to play with between answering calls and emails. Well in that case make it yourself.
